The Summer Dinner That Felt Worth Making

Some dinners feel worth making because the whole process is enjoyable. The cod Florentine was that kind of dinner. It felt fancy in the best way. I felt like a chef making it, but it was still simple enough that the fun never turned into stress. Eating it felt like being at a very good restaurant at home. The sauce was incredible and rich, the kind of sauce that makes you slow down a little while you eat. John loved it, and I loved that it felt special without being overly complicated.
I served it with tiny baby potatoes I had on hand. I roasted them, smashed them down with a spatula once they were soft, and baked them again with cheese on top. They were so good with the sauce because the potatoes held it beautifully. That was not part of a formal plan; it was just cooking from what I had. I would make that dinner again, but probably not right away. It is rich enough to tuck away for a night when it is just John and me and we want something that feels romantic and cared for.
That is a good category to have in the kitchen: simple enough to make, special enough to remember.
