The Food I Keep Ready For a Long Weekend

Long weekend food needs to work with the way people actually move through a house. Somebody is hungry before everyone else. Somebody has friends over. Somebody wants something quick before heading outside. Somebody is standing at the island talking while you are still finishing the next thing. Food that works in that kind of house has to be easy to grab, easy to share, and not too precious.

That is why I loved making queso fundido taquitos. They were simple, fun, and easy to eat. You could pick one up and keep moving, which is exactly the kind of food that belongs around a full summer weekend. I used venison chorizo we had on hand, and it was delicious. That is a normal part of our kitchen: cooking from what we actually have, using what has been provided, and being respectful about it. It is not something I want to make the whole story, but it is part of how we feed people here.

Next time, I would add a little more oil so the tortillas are more pliable. A few cracked on the side, but they still tasted wonderful and did not lose the filling. That is real cooking to me: learn, adjust, keep the useful parts. For a long weekend, I want food that feels generous without making the cook disappear into the kitchen. Something people can gather around, reach for, and enjoy.


Recipe

Crispy Queso Fundido Taquitos

This is the kind of recipe I like for a long weekend because it can be made in a batch, set out with a few toppings, and eaten by hand while people move in and out of the kitchen. Use the chorizo you like best. We used venison chorizo because it was what we had on hand, but regular Mexican chorizo works beautifully too.

Makes: 16 to 20 taquitos

Time: about 40 minutes

Ingredients

  • 1/2 pound ground Mexican chorizo or venison chorizo
  • 1 yellow onion, chopped
  • 1 poblano pepper, seeded and finely chopped
  • 1 chipotle chile in adobo, finely chopped
  • 1 cup shredded sharp cheddar cheese
  • 1 cup Monterey Jack cheese, cubed or shredded
  • 1/2 cup shredded mozzarella cheese
  • 16 to 20 corn tortillas, warmed until pliable
  • Olive oil, for brushing the tortillas
  • Plain yogurt or sour cream, salsa or pico de gallo, shredded lettuce, cilantro, and pickled onions, for serving

For the Avocado-Cilantro Crema

  • 2 ripe avocados, halved and pitted
  • 1/2 cup fresh cilantro
  • 1 garlic clove, grated
  • Juice of 2 limes
  • Flaky salt, to taste
  • A small spoonful of yogurt or sour cream, optional, if you want it creamier

Instructions

  1. Preheat the oven to 450 degrees.
  2. Warm a large skillet over medium-high heat. Add the chorizo and chopped onion, breaking the meat apart as it cooks. Cook until the chorizo is browned and cooked through, about 8 to 10 minutes.
  3. Remove the skillet from the heat. Stir in the poblano and chipotle chile. If there is extra grease in the pan, drain off what you do not want in the filling.
  4. In a separate bowl, combine the cheddar, Monterey Jack, and mozzarella.
  5. Warm the tortillas until they are soft enough to roll without tearing. Brush or rub both sides lightly with olive oil. This is the part I would be a little more generous with next time, because the oil helps the tortillas stay pliable and crisp.
  6. Working one tortilla at a time, spoon 1 to 2 tablespoons of the cheese mixture down the center. Add a small amount of the chorizo mixture, roll tightly, and place seam-side down on a baking sheet. If needed, tuck a little extra chorizo mixture into the open ends so the cheese stays enclosed.
  7. Bake for 5 to 8 minutes, then carefully turn the taquitos and bake about 5 minutes more, until the tortillas are crisp and the cheese is melted.
  8. While the taquitos bake, make the crema. Blend the avocados, cilantro, garlic, lime juice, salt, and optional yogurt or sour cream until smooth. Taste and adjust with more lime or salt if needed.
  9. Serve the taquitos warm with the avocado-cilantro crema, salsa or pico de gallo, shredded lettuce, cilantro, pickled onions, and anything else your house likes.

Serving Notes

These are best served warm, but they are forgiving in the way good long-weekend food should be. If a few tortillas crack, do not worry. A couple of ours did, and they still tasted wonderful and held the filling. The point is food people can reach for, gather around, and enjoy without the whole day becoming complicated.
