The Summer Dessert Worth Repeating

A good summer dessert should feel generous without taking over the whole day. This dark chocolate mousse did exactly that when I made it: rich enough to feel special, light enough for summer, and simple enough to belong in a real kitchen.
The best part was being able to make it ahead, spoon it into little glasses or bowls, and keep it chilled until we were ready for dessert. There was no oven warming the kitchen and no last-minute assembly. It was simply waiting in the refrigerator, cold and deeply chocolatey, with a texture that felt much lighter than its flavor suggested.
I do not repeat every recipe I make. Cooking is one of my creative outlets, so I am usually curious about what I might try next. A recipe earns its way back into our kitchen when the result is worth the effort and it fits the way we actually live. This one did.
My Made-at-Home Dark Chocolate Mousse
Makes: 8 servings
Prep time: 20 minutes
Chill time: 2 hours
Ingredients
- 8 ounces semisweet or dark chocolate, finely chopped
- 1/4 cup heavy cream
- 4 large egg yolks
- 1 tablespoon vanilla extract
- 1/2 teaspoon fine sea salt
- 5 egg whites
- 1 to 2 cups additional heavy cream, depending on how light you want the mousse
- Chocolate shavings and flaky sea salt, for serving
Instructions
- Place the chopped chocolate and 1/4 cup cream in a heatproof bowl. Microwave in 20-second intervals, stirring after each one, until smooth. You can also melt them together over a pan of gently simmering water.
- Whisk the egg yolks into the warm chocolate one at a time. Stir in the vanilla and fine sea salt.
- In a clean bowl, beat the egg whites with an electric mixer until they hold stiff peaks. Fold a spoonful into the chocolate mixture to loosen it, then gently fold in the rest until no white streaks remain.
- Cover and refrigerate for about 2 hours, until completely chilled and set.
- Add 1/2 cup of the remaining cream and whip the chilled mousse until soft and airy. Continue adding cream a little at a time until the texture is as light as you like it. I used the cream to soften the richness without losing the deep chocolate flavor.
- Spoon into small glasses or bowls. Serve right away or return the portions to the refrigerator until dessert. Finish with chocolate shavings and a small pinch of flaky sea salt.
A Note About the Eggs
Because the eggs in this mousse are not fully cooked, use pasteurized eggs when serving children, pregnant people, older adults, or anyone with a weakened immune system.
This is the kind of summer recipe I want to keep close: easy to make ahead, generous to serve, and good enough to remember.
