Pineapple Chicken With Coconut Rice for a Hot Weeknight

In August, I want dinners that feel bright and satisfying without making the kitchen feel heavier than it already does. Texas heat changes the way I cook. I reach for meals that come together quickly, use simple ingredients, and still feel like something everyone is happy to gather around.
This pineapple chicken is that kind of dinner. The chicken cooks in one skillet with a sweet, salty, slightly spicy sauce, and the coconut rice makes the whole meal feel a little more special without adding much work. The pineapple salsa keeps everything fresh, which matters in a month when even dinner needs to feel a little lighter.
It is the kind of meal I would make on a full day when people are hungry at different times. The chicken, rice, salsa, and avocado can all sit on the kitchen island, and everyone can build a bowl when they are ready.
Pineapple Chicken With Coconut Rice
This is a practical summer dinner with a little sweetness, a little heat, and enough freshness to make a regular weeknight feel cared for.

Ingredients
- 1 1/2 pounds boneless, skinless chicken breasts or thighs, cut into bite-size pieces
- 1 tablespoon avocado oil, olive oil, or another neutral cooking oil
- Black pepper, to taste
- 1/2 cup pineapple juice
- 1/3 cup low-sodium tamari or soy sauce
- 1 tablespoon honey or brown sugar
- 1 tablespoon tomato paste or ketchup
- 2 garlic cloves, minced or grated
- 1 tablespoon fresh ginger, grated
- 1 small shallot, finely chopped
- Pinch of red pepper flakes, plus more to taste
- Fresh cilantro or green onion, for finishing
- 1 avocado, diced, for serving
- Lime wedges, for serving
For the Coconut Rice
- 1 cup jasmine or basmati rice
- 1 cup canned coconut milk
- 1/2 cup water
- Pinch of salt
For the Pineapple Salsa
- 1 1/2 cups fresh pineapple, diced
- Juice of 1 lime
- 1 small shallot, finely chopped
- 1 jalapeno, seeded and finely chopped, optional
- 1 tablespoon chopped fresh cilantro, mint, or thyme
- Pinch of salt
Instructions
- Start the rice. Add the rice, coconut milk, water, and salt to a small pot. Bring it to a gentle simmer, stir once, cover, and reduce the heat to low. Cook for 10 minutes, then turn off the heat and let it sit, covered, for 10 to 15 minutes more. Fluff with a fork before serving.
- Make the sauce. In a small bowl or jar, stir together the pineapple juice, tamari or soy sauce, honey or brown sugar, tomato paste or ketchup, garlic, ginger, shallot, and red pepper flakes.
- Season the chicken with black pepper. Warm the oil in a large skillet over medium-high heat, then add the chicken in an even layer. Cook until the pieces are browned and cooked through, turning as needed.
- Pour the sauce into the skillet. Reduce the heat to medium and let the sauce simmer for 4 to 6 minutes, stirring occasionally, until it thickens slightly and coats the chicken.
- While the chicken finishes, stir together the pineapple salsa ingredients in a small bowl. Taste and adjust with more lime or salt if needed.
- Serve the chicken over coconut rice with pineapple salsa, diced avocado, fresh cilantro or green onion, and a squeeze of lime.
Serving Notes
If you are feeding people at different times, keep the chicken and rice warm and set out the salsa, avocado, herbs, and lime separately. It lets everyone build a bowl that still feels fresh, even if dinner happens in shifts.
A good August dinner does not need to be complicated. It just needs to work for the real rhythm of the house: something warm, something fresh, and enough flexibility for everyone to come back to the kitchen when they are ready.
