Coconut Chicken Curry for a Steady Weeknight
September 17, 2026
September can make the calendar feel like fall long before the Texas weather agrees. The days are still hot, but ordinary life has found its fuller rhythm again. I may bring out a few fall dishes and begin reaching for deeper flavors indoors, even while the Hill Country is still unmistakably summer outside.
This adapted-at-home coconut chicken curry belongs in that in-between season. It has enough warmth to feel like a real dinner, but it comes together in one skillet with chicken, broccoli, coconut milk, ginger, garlic, and a little curry paste. A bright mango topping keeps the bowl fresh for a warm evening.
A useful meal begins before the first ingredient reaches the pan. A clear counter and an unloaded dishwasher give me room to cook, and cleaning as I go helps keep dinner from leaving a second project behind. The kitchen does not need to be perfect. It needs to be ready enough that beginning feels possible.
Coconut Chicken Curry With Sesame Mango
This is a flexible, flavorful skillet dinner for a full evening. Keep the rice, curry, and mango topping separate, then let everyone build the bowl that suits them.
Serves

Time
About 30 minutes
Ingredients
- 2 tablespoons sesame oil
- 2 pounds boneless, skinless chicken breasts or thighs, cut into bite-size pieces
- 2 tablespoons curry powder, regular or spicy
- Kosher salt, to taste
- 3 to 4 tablespoons red curry paste
- 1 tablespoon tomato paste
- 2 tablespoons salted butter
- 2 garlic cloves, chopped
- 1 tablespoon fresh ginger, chopped or grated
- 2 cups chopped broccoli florets
- 2 1/2 cups canned coconut milk, shaken well before opening
- 1/2 cup fresh cilantro, chopped
- Steamed rice, for serving
- Naan, optional, for serving
For the Sesame Mango Topping
- 1 ripe mango, diced
- 1 cup fresh cilantro, chopped
- 2 tablespoons toasted sesame seeds
- 2 tablespoons lemon juice
- Pinch of chili flakes
- Fresh mint, optional
Instructions
- Set a large skillet over medium-high heat. Add the sesame oil, chicken, curry powder, and a pinch of salt. Cook, stirring now and then, for about 3 minutes, until the chicken begins to take on color.
- Stir in the curry paste, tomato paste, butter, garlic, and ginger. Cook for about 2 minutes, until the skillet smells fragrant and the chicken is well coated.
- Add the broccoli and pour in the coconut milk. Stir, season lightly with salt, and bring the sauce to a gentle simmer.
- Lower the heat to medium and cook for 5 to 10 minutes, until the broccoli is tender and the sauce has thickened slightly. Use an instant-read thermometer to confirm that the chicken reaches 165°F / 74°C.
- Stir in the cilantro, then taste and adjust the salt if needed.
- For the topping, combine the mango, cilantro, sesame seeds, lemon juice, chili flakes, and mint if using. Keep the topping separate from the raw-poultry prep area.
- Spoon the curry over steamed rice and add the mango topping just before serving. Warm naan is welcome alongside it, but the rice and curry are complete on their own.
Serving Notes
Serve the bowls on real dishes, even when the evening is ordinary. A spoonful of the mango topping and a scattering of cilantro are enough to make a simple skillet meal feel considered. The goal is not to perform dinner. It is to make something good and sit down while it is still warm.
A steady meal does not have to be plain. Sometimes it is a warm bowl of rice, a skillet of something flavorful, and one fresh topping that makes the whole table feel cared for.
With love and intention,
Jennifer
