What makes this one beautiful is that it tastes like real strawberries. Not artificial strawberry flavor. Not a pink cake pretending to be fruit. Real strawberries, softened into the batter and folded into a cream cheese frosting that tastes like summer with a little sweetness and a little tang.

Fresh Strawberry Sheet Cake with Strawberry Cream Cheese Frosting

Makes: one 9×13 sheet cake

Ingredients

For the Cake

  • 2 cups all-purpose flour
  • 3/4 cup cake flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup vegetable oil
  • 1 3/4 cups granulated sugar
  • 4 large eggs
  • 1 1/2 cups lightly pureed fresh strawberries, measured after blending
  • 1 teaspoon vanilla extract

For the Strawberry Cream Cheese Frosting

  • 8 ounces full-fat cream cheese, softened to room temperature
  • 1/2 cup unsalted butter, softened to room temperature
  • 4 cups powdered sugar
  • 1/4 cup lightly pureed fresh strawberries

Instructions

Preheat the oven to 350 degrees. Grease a 9×13 baking pan and line it with parchment paper, leaving enough overhang on the long sides to help lift the cake out later if desired. Wash and hull the strawberries, then pulse them in a food processor until they are mostly smooth but still have a little texture. You want a soft puree with tiny bits of strawberry left in it, not a completely thin liquid. Measure the puree after blending.

In a medium bowl, whisk together the all-purpose flour, cake flour, baking powder, baking soda, and salt. In a large bowl, whisk the oil, sugar, eggs, strawberry puree, and vanilla until smooth and well combined. Add the dry ingredients and gently fold everything together just until the batter comes together. Try not to overmix. Pour the batter into the prepared pan and smooth it evenly to the edges. Bake for 35 to 40 minutes, or until the center is set and a toothpick comes out clean with a few moist crumbs.

Let the cake cool completely before frosting. If you plan to lift it from the pan before serving, chill it for about an hour once it has cooled so it holds together more easily. While the cake cools, make the frosting. Beat the softened cream cheese and butter together until smooth. Add the powdered sugar one cup at a time, mixing well after each addition. Beat in the strawberry puree. The frosting may feel soft at first; chilling it for about an hour will help it thicken into a silky, spreadable texture.

Once the cake is fully cool, spread the frosting generously over the top. Slice into squares and serve chilled or slightly cool. Store covered in the refrigerator for up to 7 days. Because of the cream cheese frosting, this cake is best kept cold and brought out shortly before serving.
