Homemade Chili and the Comfort of a Repeat Meal

September 15, 2026

Some meals feel like a reset without asking for a lot of performance. Chili is one of those meals for me. It is simple enough to make on an ordinary day, steady enough to feed people at different times, and familiar enough to welcome everyone back to the table without much ceremony.

September may still be warm in Texas, but the house starts wanting food with a little more body and a little more staying power. A pot of chili answers that need well. It can simmer while the rest of the evening happens, and it does not ask for a perfect schedule before it becomes supper.

I like meals I can make once and trust again tomorrow. That is what makes a repeat meal valuable. It supports the night you are in, then quietly makes lunch or the next supper easier. A bowl of chili with cornbread on the side, and sweet tea if that is what is already in the fridge, feels like the kind of care a full house can recognize right away.

This is food that can bend without falling apart. That matters to me. Food does not have to be complicated to feel generous. It just needs to be useful, warm, and good enough that people are glad to see it again.

Recipe

Homemade Chili

A straightforward pot of chili for a busy September evening, with cornbread on the side and leftovers that make the next day easier.

Serves

6 to 8

Time

About 20 minutes of active time, plus 45 to 60 minutes of simmering

Ingredients

  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 4 garlic cloves, minced
  • 2 pounds ground beef
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 to 1 1/2 teaspoons kosher salt, plus more to taste
  • 1/2 teaspoon black pepper
  • 2 tablespoons tomato paste
  • 1 can diced tomatoes, 28 ounces
  • 1 can crushed tomatoes, 15 ounces
  • 2 cups beef broth
  • 1 can kidney beans, drained and rinsed
  • 1 can pinto beans, drained and rinsed
  • 1 tablespoon apple cider vinegar
  • Optional pinch of cayenne, if you want more heat

Instructions

  1. Warm the olive oil in a large heavy pot over medium heat. Add the onion and cook for 5 to 7 minutes, stirring occasionally, until it softens.
  2. Add the garlic and cook for 30 seconds, just until fragrant.
  3. Add the ground beef, chili powder, cumin, paprika, oregano, salt, and pepper. Cook, breaking up the meat as it browns, until it is no longer pink.
  4. Stir in the tomato paste and cook for 1 minute so it coats the meat and onions.
  5. Add the diced tomatoes, crushed tomatoes, beef broth, beans, and cayenne if using. Stir well and bring the pot to a gentle boil.
  6. Reduce the heat to low, cover partially, and simmer for 45 to 60 minutes, stirring now and then, until the chili tastes settled and the texture has thickened.
  7. Stir in the apple cider vinegar, taste, and adjust the salt or spice level if needed.
  8. Let the chili rest for 10 to 15 minutes before serving so the flavor can settle a little more.

Serving Notes

Serve the chili with warm cornbread, butter, shredded cheese, chopped onion, sour cream if you like it, and sweet tea on the side. If your house prefers a beanless pot, you can leave the beans out and add a little more meat or broth instead. However you serve it, this is the kind of meal that is usually even better the next day.

Repeat meals are not boring to me. They are one of the ways a home takes care of itself without making dinner feel bigger than it needs to be.

With love and intention,

Jennifer
