Strawberry Pink Drink for a Hot August Afternoon

In August, I like having something cold ready in the refrigerator. Sweet tea is usually on the kitchen island, but every now and then it is nice to make something that feels a little more special without turning it into a project.
This strawberry pink drink is that kind of recipe. It starts with a fruit tea base, gets blended with strawberries and mango or pineapple juice, and becomes creamy in the glass with coconut milk. It is pretty, cold, and easy to keep ready for the hottest part of the day.
I would make the tea base ahead, tuck it into the refrigerator, and let people pour their own over ice. It feels like simple August hospitality: something refreshing, something beautiful, and no pressure for everything else in the house to be perfect.
Strawberry Pink Drink
A creamy iced strawberry tea drink made with fresh strawberries, fruit tea, mango or pineapple juice, and coconut milk.

Ingredients
- 2 cups water
- 2 passion fruit, hibiscus, or berry tea bags
- 1 teaspoon acai powder, optional
- 1 to 4 tablespoons honey or sugar, optional and to taste
- 2 cups unsweetened green tea, chilled
- 2 cups fresh strawberries, hulled and halved
- 1 cup mango, pineapple, or white grape juice
- 2 tablespoons freeze-dried strawberries, optional
- Ice, for serving
- Unsweetened coconut milk, for serving
- Sliced fresh strawberries, for serving
Instructions
- Bring 2 cups water to a boil. Remove from the heat, add the tea bags and acai powder if using, cover, and steep for 5 to 10 minutes.
- Remove the tea bags and strain the tea into a pitcher if needed. Stir in honey or sugar if you want the drink sweeter.
- Add the chilled green tea to the pitcher.
- In a blender, puree the strawberries, fruit juice, and freeze-dried strawberries if using until smooth.
- Strain the strawberry mixture into the tea, then stir well. Chill until cold. The strawberry tea base will keep in the refrigerator for up to 1 week.
- To serve, fill a tall glass with ice. Add about 1 1/4 cups strawberry tea base, then pour in 1/2 to 3/4 cup coconut milk.
- Add a few sliced strawberries, stir gently, and serve cold.
Serving Notes
If you want this less creamy, use less coconut milk. If you want it to feel more like an afternoon treat, use the full amount. The tea base is also good without coconut milk if someone wants something lighter.
Sometimes the smallest gesture changes the whole feeling of the afternoon. A pitcher in the refrigerator, a few glasses on the island, and something cold to offer when the Texas heat has settled in.
